Hey everyone!

 

First let me announce you can read my recent blog over on Robin’s Bite about Cooking Once, Eating Twice. Robin is the RD I am interning with this summer. I share four tips to pre-prepare meals in the summer time that leave you with more time to enjoy the beautiful weather outside!

 

Second, here’s tonight’s dinner. A really simple and fast meal that we threw together in roughly 15 minutes.

This was a steamed broccoli with nutritional yeast, a simple pasta side dish with sundried tomatoes and a grilled chicken breast on the side. I marinated the chicken in Newman’s Own Tuscan Italian salad dressing, with some olive oil and Mrs. Dash chicken seasoning.

And a bonus meal from last week that was also a super fast meal to throw together:

These are homemade tostadas. Melt a little butter in a pan, set a corn tortilla in there and top it with some cheese, shredded chicken (which I cooked in my crockpot) and black beans. Cook until tortilla gets hard and stiff (TWSS). Then top with tomatoes, avocado, hot sauce or whatever toppings you like!

And finally, the puppies told me that they have many new fans on the blog that haven’t met them yet! Which prompted me to ask them to pose for pictures, but they weren’t really cooperating.

 

For those that haven’t met the puppies, here they are. These are some recent pictures I snapped in the past few days.

Lexington is a Shiba Inu and Chow Mix. She’s roughly 4 years old and been in our family about 2.5 years. She’s a rescue dog and really really shy.

She is such a good dog, although slightly aggressive about food (as in, she loves it and will steal it from your hands!)

She’s also pretty intense about bones.

Her sister is Cary. She is a Short-Haired German Shepherd mix. I’m not sure what she is mixed with, I think possibly a Doberman. Cary is approximately 2 years old and we’ve had her in our home since last October.

 

Cary is also a rescue dog. A friend of ours found her roaming around his neighborhood.  We tracked down her owner, who said he had just been divorced, couldn’t take her with him and his wife had just let her out to fend for herself. She was out on the streets for 3 weeks before we found her!

Cary is a cuddle bug. She wants to me around you, licking you, having you give her attention 24/7. Her super friendly attitude is exactly what we were looking for in a second dog to bring Lexi out of her shell.

Cary also loves bones, but would honestly chew anything she can get her teeth on. She’s notorious for chewing kitchen utensils, tupperware and towels/paper.

 

So those are the dogs in case you had not met them!

So nice to meet the pups! They are lucky to have you!!
Food looks good too! Never used nutritional yeast, I’ll have to check it out! My family dog is a westie and he’s just perfect ;) but a little deaf now!

TWSS!!! Love it!!! Does the tostada get really crunchy like when they’re fried when you cook it like that?

I love your doggies- even though Lexi doesn’t like me yet! :) . And I can’t believe someone just turned poor Cary out on the street! :( at least she found an awesome family to live with- she’s such a sweet girl!

It doesnt get crunchy enough to break in half, but it gives you a crunch when you bite down.

I melt a little butter in a skillet, rub both sides in the melted butter then put on my toppings already warm and cook for about 5 minutes.

Those tostadas look delish! Cute puppies, too. I’m petless for the time being. I don’t feel like I’m home enough to take care of one well.
