Another Monday and another week of batch cooking/meal plans!

Last week’s meals look pretty similar to the week before. It wasn’t planned that way, it just sort of happened. I promise next week’s meals will be completely different!

As the week before, I batch prepared and cooked everything over the weekend. While it’s definitely a lot of work over the weekend, it makes my nights so much smoother! We’ve barely eaten out these past two weeks as well, which is great!

I had some a few things leftover from the week before that I integrated into this week’s meal plan.

Groceries

This past week I only went to Kroger. It was actually a pretty big shopping trip for us, but we ate almost all the food over the week, so it was worth it! I didn’t have to do any other shopping trips throughout the week (until like the previous week), so I’d say we did a good job getting everything we needed.

Fruits/Veggies: Shredded carrots, bananas, mushrooms, organic spring mix, organic romaine, apples, baby carrots, onions, radishes, green peppers, avocado, cucumber, basil, organic plums, garlic, tomatoes

Pantryish: Generic cheerios, whole wheat bread, hot sauce, franks sauce, marinara sauce, canned: corn, crushed tomatoes, peas, green beans, black beans; crispy jalapenos, raisins, mojo bars

Refrigerated: 93% ground turkey, 99% ground turkey, chicken breasts, milk, turkey and ham lunch meat, egg whites, eggs, greek yogurt, parmesan cheese, mozzarella cheese, ricotta cheese, wonton wrappers, cheddar cheese, pudding

Meal Prep

Here’s everything I prepped on Sunday for the week.

Lasagna cups (we are obsessed!) from Cherie’s blog and chicken marinating in franks hot sauce for Matt to cook later in the week

Chicken Rollatini with spinach alla parmigiana from Skinny Taste, raw cucumbers and radishes

His and her salads, both side and entrée size. Mine had spring mix, carrots, mushrooms, radishes and cucumber. His had romaine, peas, corn, black beans, carrots and parmesan cheese.

Sunday and Thursday: Lasagna cups, salad, applesauce

Tuesday: tomato and mozzarella panini + veggie and potato hash with bbq sauce

Wednesday: buffalo chicken salad with mozzarella cheese, carrots, radishes, mushrooms and cucumber

Turkey burger with tomatoes, pickles, avocado, crispy jalapenos and mustard. Grilled corn on the cob on side (Matt picked up some corn and avocado on Saturday for this meal.

Homemade whole wheat pizza with green peppers, garlic and turkey

And I wanted to leave y’all with a picture of one of the lunches I had this week at the hospital. This was a made-to-order chicken pot pie with salad on the side. The pot pie had carrots, celery, peas, potatoes, onion and chicken. So good!

So there’s another week of meals and groceries for y’all!

BTW – do y’all like the format of these posts? I feel like I’m just putting picture after picture up, but I don’t really have the patience/creativity to think of another way to do it ?

i like the format of the posts! prep & then meals…it works! :)

and now i feel inspired to put together a bunch of salads for the week like you do. i know i probably said this last week, but i MUST get back into the habit of doing meal planning/prep on the weekends.

I personally like the format – it’s giving me a lot of ideas & inspiration! I think I might do some similar posts to keep me on track too when I start school in two weeks (ugughhhghhahhahhhhhugh <– insane woman laugh).

I wash it and spin it in a salad spinner! Then I just put all the dry stuff in and we put dressing on when we eat.

I have ours in the oven right now! A few leftover wontons wrappers were in the fridge so I knew what would be for dinner tonight! :-D

Great job prepping! I always make my breakfasts and lunches in advance, but lately I’ve been too busy to do much with dinners. I love that you even pre-chopped veggies for your meals to make cooking faster, and this his & hers pre-made salads are such a great idea!

Since we’re moving this weekend, I’ve been eating lots of stuff from our freezer and pantry. Our next apt has a fridge that’s about 25% smaller, so I need to figure out how I’ll get all my regular staples & pre-made meals to fit!
