vanishing act

Oh hello :)

I’m so happy life is back to normal as of yesterday! The past three weeks have been INSANE. There have been so many wonderful things happening, but I also feel like I’ve been going non-stop, 180 mph for three weeks straight. And it just hasn’t stopped.

Last week I promised to share all the wonderful things that have been happening, and then I totally dropped the ball on that! I left early Thursday morning to head to Austin for Matt’s MBA graduation – so it was hard to fit everything in Monday-Wednesday. I decided to leave my laptop at home and just enjoy uninterrupted family time while I was in Austin, which is very uncharacteristic for me (since I’m usually working constantly through my free moments). I really enjoyed the unplugged weekend though and while I don’t feel recharged yet, I am working on getting myself there.

But now I promise I’m back and will be sharing adventures as of late with y’all. Forgive me while I play housekeeping and try to get everything up! I posted my goals for the week over on my other blog (since I’m so behind here) – so y’all can go read those if you like.

It feels like years ago at this point, but three weeks ago I was entering finals week. Then a mountain of other things happened. Like…

Matt and I celebrated our four year anniversary! The night of our actual anniversary, I was studying for my Medical Nutrition Therapy Final. But the next night we got dressed up and went to dinner at The Classic Café, which is an amazing restaurant we go to when celebrating special events. Dinner was phenomenal!

I was honored at a Cooking Matters volunteer appreciation event with an amazing award for being an Emerging Leader. It was such a shock and honor and I can’t wait to share more about it and the program too.

I learned how to play disc golf (which is wicked hard, by the way). Matt LOVES disc golf and we have a course really close to our house, but never go play. He finally took me – and it’s definitely not something a beginner can just pick up. I could NOT get the hang of throwing the disc right, but with a little practice – I’m hoping I’ll get better!

Oh yeah, I graduated (post to come, once I get the pictures from everyone)

Then, Matt graduated with his MBA and we spent a weekend running around Austin with his family (post to come too!)

So – if I’m counting right, I owe y’all three posts this week with more details about some of these events. I’ll be sure to come back and tell you all about it :)

And probably the most amazing feat of all – I’ve managed to maintain my workout schedule, both with my trainer and with some solo workouts through this whole mess. I really call that the celebration in all this – even if this scale isn’t showing the fruits of my labor just yet.

What have I missed while I’ve been gone?

How did I not know you were BOTH in school!? This is an incredible feat for a couple!!! I can’t believe it because I know how HARD you have to work to make a household/romance/love/partnership work with just one person in school – let alone two!!! Totally insane and I have huge, huge, huge respect for you both :) CONGRATS on graduation and all your amazing things lady!

You probably didn’t know because I don’t talk about his personal life that much! I don’t know that he loves me flashing what he does every day around the interwebs :)

But, yes, he’s in school! He also works full time, if you can believe it! He is doing a every other weekend MBA where he’s in class 12 hours (4 one night, 8 the next day) twice a month. It was super hard at first, not going to lie, but we got in a rhythm and figured it out and now I’m used to it!

Congratulations on EVERYTHING! What a fun surprise to get the Cooking Matters award on top of all you already have to be proud of!

I’ve never tried Disc Golf before but would love to try it. Is it harder than regular golf?

Eh, I’m not sure if it’s harder than regular golf! Golf is freaking hard. But this is really hard too. You have to throw those discs super far, and that takes some practice to get it far and in line with the hole. Definitely worth a try though! Lots of walking and it’s a really social game.

Congrats to you and Matt both!

The first time I tried disc golf I was so frustrated with my disc throwing ability (or lack thereof) I practically had a hissy fit on the course!
